

Creamy Potato Leek Soup with Greens
This recipe is incredibly simple and delicious. And it only takes about a half an hour to make! Here's what you'll need: 2 large or 3-4 small leeks - dark green stems removed, washed thoroughly and sliced thinly 2 stalks of celery, chopped 4-6 small yukon gold potatoes, peeled and roughly chopped 3-4 cups of vegetable broth 1/2 cup of nutritional yeast 4 heaping cups of fresh spinach 1 tsp of salt (optional) black pepper to taste Topping: green onions, chopped or snipped
